What exactly is it?
A full day of training and discussions about managing food allergies in childcare centres or at home.
By the end of the day:
you will be able to decode food labels;you will be able to identify the hidden sources of several allergens;you will be better able to avoid the traps that lie in wait at the supermarket;you will know how to obtain the most reliable information possible from manufacturers;you will know what precautions to take to avoid food contamination (more than 25 measures to help reduce the risks);you will know the measures to take to ensure a safe environment for the person with the allergy… and which measures are not necessary or recommended;you will know what substitute to use to replace the prohibited food and will be able to separate the good substitutes from the bad (or the not so good);you will know a number of tangible helpful hints that will enable you to save time and will make life much easier; etc.
As well, you will receive:
a 25-page document including a helpful reminder for food allergies, a list of key words used by manufacturers to designate certain allergens, an elaborate table of food substitutes as well as a list of resources anda booklet containing a model menu reviewed by a dietitian and over 25 proven and tested recipes
Participants will be able to sample some dishes that are free of most, or all, of the commonest food allergens.
Who is the target clientele?
persons in charge of food services and other childcare service professionals (early years centres, daycare centres, schools);people with allergies, and their family members and friends (parents, grandparents, etc.);dietitians; andanyone who must must take allergy-related food restrictions into consideration when cooking.
About the instructor
Karen Eck is the leader of the Ottawa Anaphylaxis Support Group (OASG) and the moderator of Allergic Living’s Talking Allergies forum..jpg)
A professional technical editor with a B.A. and M.A. from the University of Ottawa, she worked on the national anaphylaxis guidelines Anaphylaxis in Schools & Other Settings and the related Allergy Safe Communities website. In 2007, she was the lead OASG volunteer for the Allergy/Asthma Information Association's INSPIRE! conference on asthma, allergies and anaphylaxis. Karen was the recipient of the City of Ottawa’s 2006 Civic Appreciation Award (Health) for her work with the OASG.
Karen is also the proud mom of Epi-Man and Epi-Man Jr., two young super heroes with multiple food allergies who are on a mission to keep other allergic kids safe.

Reimbursement policy
Notice of cancellation must be received at least 10 days prior to the date of the workshop in order to obtain a reimbursement of the registration fee. We reserve the right to cancel a workshop if the number of participants does not meet the minimum requirement, in which case the registration fee will be fully refunded.
